Khichdi is a common comfort food in all parts of India. Each state makes it a little differently, but it usually contains some vegetables or nuts, a few spices, and a wheat and lentil mixture. Our khichdi is made of semolina flour mixed with vegetables, spices, and turmeric. Packed with protein, carbohydrates and nutrients, this is great as a one pot meal! However, if you want to spice things up a bit, (pun intended) drizzle some coconut chutney on top!

Serves 1-2 people (5.25 oz)

Pronounced as [khi-chi-dee]. Also known as vegetable wheat porridge.

Carrots, Peas, Cilantro, Curry Leaf, Ginger, Cumin, Semolina, Vegetable Oil, Green Chili, Red Chili

On the Stovetop:

  1. Add 1.5 cups of water to the pot. On high heat, bring to a boil.
  2. Once boiling, empty the packet into the pot and stir to spread. Bring to a simmer.
  3. Cover the pot for 3-5 minutes, or until desired consistency.

In the Microwave:

  1. Mix 3/4 cup of water and packet in a bowl. Stir well.
  2. Microwave for 1.5 minutes.
  3. Repeat steps for thicker consistency or longer cooking time.
